Vegan Cashew Butter Cake

  • 1 ½ cup of almond milk
  • ¾ cup of sugar
  • 1 ½ teaspoons of vanilla extract
  • ½ cup of Once Again Creamy Cashew Butter
  • 2 cups of white wheat flour
  • 2 teaspoons of baking powder
  • ¼ teaspoon of baking soda


  • ½ cup of chocolate chips
  • 2 teaspoons of coconut oil
  • 2 tablespoons of Once Again Creamy Cashew Butter


  1. Start by adding the almond milk, vanilla extract, and cashew butter to a  blender. Blend well; then slowly introduce sugar, baking powder, baking soda, and flour while continuing to mix.
  2. Transfer mixture to a 9x9 pan and  place  it in an oven preheated to 350 degrees Fahrenheit for about 30 minutes or until you can insert a toothpick in the center of the cake  and remove it clean.
  3. While the cake is baking, place chocolate chips in small saucepan  and stir until melted; then add coconut oil and cashew butter and stir. Keep the mixture  warm until cake comes out of the oven.
  4. When the cake is ready, using a fork, poke some holes on top of the cake and pour the chocolate glaze over it . Enjoy! Store in an airtight container for up to four days.
