Blender Banana Cake

This cake is so easy to make you may find yourself baking it a couple times a week! Delicious treat with an afternoon cup of tea or as a breakfast too.

  • 4 eggs
  • 3 bananas
  • 1/3 cup of coconut oil
  • 2 cups of quick oats
  • 2 teaspoons of baking powder
  • 3 tablespoons of Once Again Sunflower Seed Butter
  • 2 teaspoons of sugar
  • 1 teaspoon of cinnamon
  • 2 teaspoons of lemon juice
  • 3 bananas for the bottom of the pan


  1. Add all the ingredients in no specific order to a blender! That’s how easy this is.
  2. Blend until achieving a cake dough-like texture.
  3. Prepare a 9X9 square baking pan with non-stick spray and a very light coating of sugar (you may use coconut sugar)
  4. Then slice the 3 extra bananas lengthwise and place them on the bottom of the pan. Pour cake batter over it and place it in an oven pre-heated to 350 degrees Fahrenheit for 35 to 40 minutes.
  5. Remove from oven, wait until it cools to slice. Any leftovers should be stored in the refrigerator for up to three days.
