  • 1 cup of oat flour
  • ½ cup of Once Again Tahini
  • ¾ cup of sugar
  • 2 teaspoons of vanilla extract
  • ½ cup of cocoa powder
  • 2 eggs
  • ½ teaspoon of baking soda
  • Makes 24 cookies

  1. In a medium-sized bowl, combine flour, cacao powder, sugar, and baking soda. In a separate bowl, beat eggs with tahini and vanilla extract.
  2. Combine dry ingredients into tahini mixture, slowly. Do not over mix it, just mix enough to combine all ingredients into a homogeneous dough. Place dough in your refrigerator for 15 minutes.
  3. Using a small cookie scoop (1/2 tablespoon size), place cookies on a lined cookie sheet. Place them in an oven preheated to 350 degrees Fahrenheit for 20 to 30 minutes. Or visually observe cookies until the outside starts to show cracks.
  4. Remove cookies from the oven and let them cool. You may sprinkle some powdered sugar or use your imagination to come up with original toppings! Serve them within four days for best results.
