  • 1 cup of Once Again Peanut Butter
  • 1/3 cup of maple syrup or honey
  • 1 egg
  • 3 tablespoons of coconut flour
  • ½ teaspoon of baking soda

  1. Start with softened peanut butter. If you happen to store peanut butter in the refrigerator, make sure it is at room temperature before you start whipping up this recipe.
  2. Add maple syrup or honey and stir ingredients together well.
  3. Next, add beaten egg and continue mixing well. Add baking soda to coconut flour and stir both into the peanut butter mix at one time.
  4. Mix well and shape into small balls; you should get about 20. Then place them on a baking sheet and press.
  5. Place cookies in an oven preheated to 350 degrees Fahrenheit and bake for 8 to 10 minutes —or until golden around the edges. Let cookies cool before removing them from the cookie sheet.
