Barbecued Peanut Chicken

  • 1-1.5 pounds chicken breast
  • 2 tablespoon of Once Again Creamy Peanut Butter
  • 1 tablespoon lime juice
  • 2 tablespoons soy sauce
  • 1/3 teaspoon curry
  • 1/3 teaspoon turmeric


  1. In a small bowl, mix peanut butter and lime juice. Once well mixed (you may find it easier to mix using an immersion blender) add in the reminder of the ingredients.
  2. Using a sharp knife, butterfly the chicken breast. The mixture will be enough for 2 medium-sized chicken breasts.
  3. Place directly on the grill and brush half of the mixture on the chicken. After 10 minutes, flip over the chicken and brush the other side with the rest of the mixture.
  4. Grill until the chicken is cooked thoroughly. Enjoy with a side of broccoli or corn!
