Slow Cooker Thai Chicken

Ingredients

  • 2 boneless chicken breasts about 1 lb.
  • ½ cup chopped green peppers
  • ½ cup chopped red peppers
  • ½ cup chopped onions
  • ¼ cup chopped celery
  • 1 tablespoon chopped parsley
  • ½ cup vegetable broth
  • ¼ cup of Once Again Creamy Peanut Butter
  • 1 tablespoon of lime juice
  • 2 tablespoons of soy sauce or liquid aminos
  • ¼ tablespoon of cumin

Instructions

  1. Place chicken on the bottom of the slow cooker, and then add  chopped peppers, onions, celery and parsley. In separate bowl, using a whisk, mix together  the vegetable broth, soy, peanut butter, lime juice and cumin.
  2. Add sauce to slow cooker and set on low for 3-4 hours. At around the 3-hour mark,  remove the chicken, shred it with a fork and return it to the slow cooker for another 30 to 60 minutes.
