Pumpkin Oatmeal Bars

  • 3 cups of quick oats
  • ½ cup pumpkin puree
  • 1 cup milk of your choice
  • 2 eggs
  • 2 teaspoon baking soda
  • ¾ teaspoon salt
  • ½ cup of Once Again Creamy Peanut Butter
  • 2 teaspoon pumpkin pie spice


  1. Mix pumpkin puree with milk, then add peanut butter and eggs. In separate bowl, mix oats, baking soda, salt and pumpkin pie spice. Now mix it into the pumpkin,  and combine  all ingredients well.
  2. Pour into a 9×13 inch pan and take it to a 350 degree Fahrenheit oven for 20-25 minutes, until the top is golden. Serve  bars  with maple syrup or honey for breakfast or an anytime snack! Save left overs in sealed container in refrigerator for up to three days.
