Almond Flax Quick Bread

A simple to prepare quick bread recipe, and the bread is fluffy and just sweet enough. The added flax seeds provide fiber and protein. Make it for breakfast, afternoon tea, a post-workout snack, or whenever you crave something baked but are still looking for something nutrient- rich, too!

Ingredients

  • 4 bananas
  • ½ cup sugar
  • 2 flax eggs or regular eggs if not vegan
  • ¼ cup Once Again Crunchy Almond Butter
  • 1 cup oat or white flour
  • 1 cup whole wheat flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1/5 cup ground flax seeds

Instructions

  1. Mash bananas well, and then add sugar and Once Again Crunchy Almond Butter and mix until blended smooth.
  2. Add eggs and beat with a mixer at low speed.
  3. In separate bowl, mix flour, baking soda, salt and flax seeds. Then blend into the wet mixture.
  4. Pour into a greased pan and bake it in an oven pre heated to 350 Fahrenheit degrees oven for about 40 minutes. Store in dry and cool plate for up to 4 days. May also slice and freeze.
