Vegan Pumpkin Fudge

Fudge made with vegan ingredients with all the pumpkin flavor you crave! Deliciously healthy enough to be part of your breakfast or snack.

  • ¾ cup of Once Again Cashew Butter
  • ¼ cup of pumpkin puree
  • 2 teaspoons of pumpkin spice
  • ¼ cup of coconut oil
  • cup of honey or brown rice syrup


  1. This recipe works best if Once Again Cashew Butter is at room temperature. Mix pumpkin puree with cashew butter, if mixture is too thick, slightly warm over low heat. Add coconut oil, honey, and pumpkin spice. Mix well and pour onto silicone loaf pan measuring 9x4. If preferred, use a smaller sized pan for thicker fudge pieces.

  2. Refrigerate for up to 4 hours to set, or take to freezer for 1 hour for faster results. Slice and serve! Store in refrigerator and enjoy for up to 4 days.
