Fruit & Nut Wheat Berry Salad

Ingredients

  • 2 1/2 cups water
  • 1/2 cup wheat berries rinsed
  • 1/2 tsp salt
  • 1/2 cup chopped dried apricots
  • 1/2 cup dried cranberries
  • 1/2 cup sliced scallions
  • 1/4 cup chopped pistachios
  • 1/4 cup sliced or slivered almonds
  • 2 tbsp Once Again Killer Bee Honey
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh orange juice
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp salt

Instructions

  1. Place the water, wheat berries, and salt in a pot. Bring to a boil. Reduce to a simmer. Cover and cook until the wheat berries are tender, about 1 hour. Drain.
  2. Place the wheat berries, apricots, cranberries, scallions, pistachios, and almonds in a bowl.
  3. Whisk together the honey, olive oil, juices, mustard, and salt in a separate bowl.
  4. Pour the dressing over the wheat berry salad and toss gently to coat.
