Berry Cashew Frozen Pie

A traditional pie crust is made up of butter, flour, and salt. It is baked first, then filled with a topping and after, a crown of crust is placed above the creation and baked again. That’s a lot of work for pie! Not that it isn’t worth it. Crust can be the ultimate secret to a fantastic pie. As you’ll see it holds true for our Berry Cashew Frozen Pie today.

However, if you just don’t have the time, or are looking for a crust with a little more taste, nutrient dazzle and texture, then nuts are your answer. Combining nuts and dates in a food processor creates a homogeneous mixture that can be pressed and shaped to work as a pie crust. We have used this type of crust for pies that are baked as well as for ones that simply go into the refrigerator or freezer to set. Both options have proved successful.

Pie crusts made with nuts are much richer in flavor, thus complementing the taste of the filling. At times, the crust can accentuate and bring out the natural sweetness in the fillings’ ingredients. Dried dates or apricots are a good option to process with nuts for a crust. They are high in natural sugar and work as a binding agent to hold the crust together. Some options for nuts include peanuts, cashews, and almonds, all of which work well for pie crust. Enjoying a piece of pie doesn’t usually mean meeting some of your nutrient needs, but when you swap ingredients as we did in the recipe below, eating pie could become an amazingly sensible part of your healthy diet plan!
